Chia Seed Pudding & Giant Peanut Butter Cup

As some of you know, I recently got my hands on a copy of the new cookbook by Stephen & David Flynn, the guys behind The Happy Pear brand. Some of the recipes look so delicious, and if you follow this blog on Facebook or Twitter you may have seen some of my efforts in recreating them. This time, I wanted to share two of them with you. One’s a great option for an on the go breakfast, while the other is a bit more of an indulgent treat that is a new take on the classic Reese’s Peanut Butter Cup, which I love.

Chia Seed Pudding 

If any of you are looking for a quick, go-to breakfast that is low-calorie, and full of fibre and protein, and tastes great, then look no further.


Ingredients:

1/2 a banana

125g of raspberries

2 tablespoons of chia seeds

250ml of rice milk (I was a in rush when getting the ingredients and couldn’t find rice milk, so I used almond milk in the same quantity. Still tasted great)

2 tablespoons of porridge oats (these can be gluten-free if you wish)

Directions:

Mash up the banana and the raspberries until you have a nice smooth mixture. Then transfer to a bowl, and mix it up with all the other ingredients and leave it to set for a few hours or over night. I chose to leave it overnight as it seemed to make it a bit more solid than it would have been after just a few hours.

Once it’s set you can serve it with whatever you fancy. I went for some extra raspberries, a sprinkle of chia seeds and some goji berries on mine, which tasted great. It’s really that simple. If you’re in a rush, you could transfer it to a small jar and take it with you on the way to work, school, or wherever it is you’re headed. And it will keep you full to!

Giant Peanut Butter Cup

While I loved the chia seed pudding, this recipe was my favourite of the two. I mean, who doesn’t love chocolate and peanut butter together? And again it took hardly any time at all to whip up.

Ingredients:


650g of dark chocolate

275g of ground almonds

400g of peanut butter (crunchy or smooth, it’s up to you. I used smooth)

125ml of maple syrup

1 tablespoon of coconut oil

Directions:

Line a 23cm springform tin with parchment paper (if you can, use a tin with grooves to give the cup a nice effect). Melt 350g of your chocolate and spread it evenly on the base of the dish and all up the sides and then leave it to set for half and hour in the fridge. While you’re waiting, put the peanut butter, ground almonds and maple syrup into a bowl and mix them together until you have a nice smooth peanut butter dough ball. It’s easier to do this with your hands as you can really work all the ingredients together. You’ll know it’s done when you can touch it and your hands come away clean.

Take your chocolate base out of the fridge and remove it from the tin (leave the parchment paper still attached) and leave aside. Use the base of your springform tin as a template to shape your dough ball so that it will fit nicely in the chocolate base. Now put the base back in the tin and place the dough ball in it, gently working it if you need to make any adjustments (leave a little gap between the base and the dough so that the chocolate topping can join with the sides of the base).

Melt the remaining chocolate with the coconut oil (give them a good stir so they mix together well). Pour the melted chocolate over the filling, and spread evenly across it, taking care to give it a smooth finish. Place the finished cup back in the fridge and leave it to set for at least half an hour. Then use a hot knife to cut it into slices and enjoy!

This tastes so good, and actually is pretty close to what the Reese’s cup tastes like. It’s gluten-free and depending on the brand of dark chocolate you use, can be dairy free as well. When slicing, I’d advise you to go smaller rather than bigger, because although it’s tasty, it’s also filling.
